Dry Fly, in Spokane, was started a few years back by two former marketing executives with a passion for fly fishing. They devoted themselves to a business plan based on locally grown ingredients. This is excellent craft spirit based on wheat. It starts softly, as can be expected of the grain, with a suggestion of sweetness. Then it turns satisfyingly dry and lightly chalky, with notes of yeasty bread, dry cereal and faint peach. It's all too easy to reach for a second pour; $60 in Quebec.
