From Australia's relatively cool western enclave of Margaret River near Perth, this ripe yet very dry red could teach a course in textbook cabernet flavours. Intense cassis, mint and black-olive-tapenade flavours get lift from tart acidity and find further structure in dry-dusty tannins. Ideal for roast beef; $49.98 in Nova Scotia.
