Wildass, with its donkey logo and Wild West typeface, is the casual brand made at Stratus, a high-end winery in Niagara-on-the-Lake. Stratus winemaker J-L Groux, a native of France’s Loire Valley, is a master blender who’s crafting mould-breaking cuvées. The recipe here includes cabernet franc, merlot, cabernet sauvignon, syrah and tannat. It’s medium-bodied and chewy, with tight structure offering up berries, herbs and light smoke.
