A drink of stunning colours

Laura Leyshon/laura leyshon The Globe and Mail

Beet'n To a Pulp - with its deep earthy aroma and sweet licks of chocolate - makes a most dramatic of impressions.

The drink's stunning dark purple jewel tone is topped with hot-pink froth that is as thick as a well-made cappuccino.

1 ounce organic Square One vodka

2/3 ounce Galliano liquor

1/3 ounce Crème de Cacao

2 ounces fresh organic beet juice

Juice the beet in a juicer. Pour all the ingredients into a mixer over ice and shake hard. Strain into a martini glass and serve straight up.
