Ingredients

12 oz dark chocolate

1 ½ oz butter

5 yolks

4 tbsp sugar

3 cups 35% cream

Chocolate sprinkles

Method

To prepare the glasses, dip the rim of each glass in melted chocolate (upside down). Transfer the glass to a bowl of chocolate sprinkles and twist or rotate the glass in the sprinkles until evenly coated.

To make the mousse, melt chocolate and butter in a heat-proof bowl over a pot of simmering water.

Once melted, set a side and let cool to room temperature.

Meanwhile in a mixer, whip cream to soft peaks. Set aside.

Now, in a clean bowl, whip together egg yolks and sugar until pale and airy.

Transfer the egg mixture into a bowl, and gently fold in the chocolate.

Once incorporated, fold in the whipped cream. The cream is folded in properly until no steaks of white cream remain.

Transfer the mousse mix to a piping bag, and pipe into martini glasses until ¾ full.

Chill for at least one hour before serving.

To serve, pile the top of the mousse with chocolate shavings.
