Franz Swinton, the award-winning mixologist at District, a popular pub in Calgary, was inspired by the flavours of aged rum when he invented this cocktail.

Ingredients

2 ounces aged rum (Swinton uses Havana Club 7 Year Old Rum or Appleton 12 Year Old Estate Extra)

1/8 ounce Chambord black raspberry liqueur

1 level teaspoon fine sugar

2 dashes Fee Brothers Aztec Chocolate Bitters

Dash orange bitters

Method

Place all the ingredients in a mixing glass filled with ice and stir until the sugar is dissolved and the drink is well chilled. Pour over fresh ice in an Old Fashioned glassand garnish with an orange peel.
