He became known as the chef who loved the Ramones and hated ABBA, smoked and drank unrepentantly, and said that, more than ant eggs and raw seal eyeballs, Chicken McNuggets were the most disgusting things he'd ever eaten.

He's also known for dropping F-bombs like a B-52, and doesn't pull punches when talking about the restaurant biz or his fellow TV chefs – many of whom, he points out, have never actually worked in restaurants.
