A white grape deserving wider recognition, pecorino is a signature of central Italy, including the Terre di Chieti district of Abruzzo, the source here. It's medium-bodied and silky, with hints of dried apple and candied fruit resolving with a bracing, bitter note on the finish. It would pair beautifully with fish seared with butter.
