Fruits and veggies may not be everyone's favourite foods, but serving them as a sorbet of sorts can almost guarantee these healthy options will be a hit.

Simply freeze peeled raw beets, carrots, apples or even terrines, then micro-grate them over salad greens or other vegetables as you would cheese.

Look for micro-planes at specialty kitchen-supply stores or use the finest grate option on a conventional grater to create this unique garnish and surprise your guests with light clouds of cool.
