@Benmsys: I read you should add garlic to hot oil. I have more control adding the garlic to oil, then heating it. Why do you heat oil first?

Jamie Oliver: If you don't feel in control, then start with a cold pan. But if you're organized, and you've prepped all of your ingredients in advance, then by all means heat up your oil, chuck in the garlic and the minute it's on the turn to golden, add your other ingredients. Do whatever makes you feel in control and, as you get more experienced, bend the rules to suit you. You're right; the worst thing is the bitter taste of burnt garlic.
