Use apples that hold their shape -- Spys, Golden Delicious or Mutsu.

Ingredients

¼ cup dried cranberries

¼ cup pitted dates

¼ cup chopped almonds

2 tablespoons butter

4 apples

1 cup red wine

½ cup cranberry juice

½ cup granulated sugar

Method

Preheat oven to 375 F. Combine cranberries, dates, almonds and butter in food processor. Purée until paste-like.

Peel top one third of apple. Core, making enough space for the filling but leaving a little apple at the base. Divide puréed mixture into 4 portions and stuff into apples. Combine wine, cranberry juice and sugar in baking dish. Place apples in baking dish.

Bake for about 50 to 60 minutes or until apples are tender when pierced with a toothpick. Baste occasionally with the sauce. Remove apples from dish.

Pour sauce into a pot. Bring to boil, reduce until slightly thickened, about 7 or 8 minutes. Place apples on 4 serving plates and pour sauce over top.
