Ingredients

Diced onion, garlic and a half bulb of fennel

2 tsp dried oregano

1 tsp each dried chili flakes and tomato paste

1 bay leaf

2 cups diced tomatoes with their juice

2 cups stock

1/2 cup white wine

1/2 pound washed clams

1/4 pound mussels

4 oz of a cubed, firm white fish like halibut

Salt and pepper for seasoning

Method

Sauté diced onion, garlic and a half bulb of fennel in 1 tbsp olive oil. Stir in 2 tsp dried oregano, 1 tsp each dried chili flakes and tomato paste and a bay leaf. Add 2 cups diced tomatoes with their juice and 2 cups stock, along with 1/2 cup white wine. Simmer 20 minutes, then add 1/2 pound washed clams and 1/4 pound mussels. Cover and steam 5 minutes, removing shells that don’t open. Add 4 oz of a cubed, firm white fish like halibut and simmer a few minutes longer. Season with salt and pepper.
