Ingredients

Mirepoix

11/2 tsp cumin

1/2 tsp ground coriander

1 cup red lentils

3 cups chicken stock

1 cup water

Salt and pepper for seasoning

Juice of a lemon

Parsley for garnish

Method

Sauté mirepoix in 1 tbsp olive oil, then add 11/2 tsp cumin, 1/2 tsp ground coriander and 1 cup red lentils. Stir for a moment to coat lentils, then add 3 cups chicken stock and 1 cup water. Simmer until lentils explode. Season with salt and pepper and the juice of a lemon. Garnish with parsley.
