This is the favourite Portuguese dish found on beaches in Portugal and on the boardwalk here. If you prefer, remove the head and tail before grilling. The recipe comes from Carla Azevedo, adapted from her classic Portuguese cookbook Pimentos and Piri Piri.

Servings: 4 as an appetizer

Ready Time: 10 minutes

Ingredients

1 tbsp finely chopped garlic

3 tbsp olive oil

1 tbsp finely chopped parsley

1 tbsp finely chopped cilantro

1 tbsp lemon juice

8 sardines

Salt and freshly ground pepper

Lemon slices to finish

Method

Preheat grill to high.

Mix sauce ingredients in a small bowl. Brush over sardines and season with salt and pepper. Grill for 3 to 4 minutes a side, or until skin is crispy and browned.

Serve sardines with lemon slices and remaining sauce.
