Ingredients

1 cup coconut milk

2 tsp red curry paste

1 tsp grated lime zest

1/2 tsp sugar

2 tsp lime juice

Salt

Method

Combine coconut milk, curry paste, lime zest and sugar in a small pot and bring to a boil. Reduce heat and simmer for 10 minutes or until the consistency of heavy cream.

Remove from heat and stir in lime juice.

Season with salt to taste.
