Here's an idea: Canada and the United States team up and mutually celebrate Canada Day and Independence Day to create one ultra long weekend. We are neighbours, after all. We should support each other.

Undoubtedly, the powers that be will never go for that idea, but you can still mark both holidays this weekend with the Maple Nut Bourbon Sour, a Canadian take on a classic American drink. Created by Melissa Logie, bartender at the Fairmont Waterfront in Vancouver, the cocktail goes Canuck by swapping in maple syrup for the traditional simple syrup. Black walnut bitters – conjuring ideas of forests fit for camping and cottages – sub in for the more herbal and tropical angostura.

Servings: Makes 1 cocktail

Maple Nut Bourbon Sour

1.5 oz Gentleman Jack

.5 oz fresh lemon juice

.25 oz fresh lime juice

.5 oz pure maple syrup

.75 oz egg whites

2 dashes Fee Brothers Black Walnut Bitters

Method

Shake all ingredients first without ice (dry shake) then shake again with ice until well chilled.

Strain into a cocktail glass.

Optional: Garnish with a decorative maple leaf using a stencil and a fine spray bottle filled with bitters.
