Fifty per cent of the juice was fermented with wild yeast to help harness a more complex flavour profile. Mission accomplished. It's medium-bodied and juicy, with ripe fruit fused with subtle oak and earthy-spicy notes behind integrated, slightly chewy tannins and bright acidity. The fruit-forward character is arguably more New World than French, but this excellent pinot shows smart balance and precision ripeness. Perfect for grilled salmon. Available at B.C.
