1 large red pepper , diced

4 cloves garlic

2 tbsp smoked paprika

½ tsp cayenne pepper

½ tsp chili flake

¼ cup white vinegar

2 tbsp lemon Juice

½ cup vegetable oil

1 tsp salt

Method

Combine all ingredients in a food processor or using a hand blender process the mix until well blended. Pour mixture over entire chicken and allow to marinate for a minimum of 1 hour. You can marinate the meat over night to allow for a more intense flavor.

Cook chicken over medium to medium-high heat to and internal temperature of 165 degrees.

When cooked allow to rest 6 to 8 minutes and serve.
