One-bowl rice dishes work for me. It's possible to add diced chicken or shrimp to this basic vegetable version. And if you want to add harder vegetables, make sure to precook them.

Steamed Rice with Vegetables

2 cups jasmine rice

2 1/2 cups water

2 tsp sriracha

2 tbsp fish sauce

4 baby bok choy, sliced in half lengthwise

4 large shiitake mushrooms, torn in quarters

2 tbsp finely chopped green onion

Method

Rinse the rice briefly in a strainer. Place in a heavy pot and cover with water. Stir in the sriracha and fish sauce. Bring to a boil over high heat. Cover and reduce heat to low.

Cook for five minutes. Stir in the baby bok choy and mushrooms. Cover the pot again and cook for another 10 minutes or until the rice is cooked and the vegetables are tender. Give another stir before serving. Scatter with green onions.
