I love nettles, but my sister hates them. Any recipes besides soup that might convince her? @annatrhe

I love people that love nettles! Twice a year you get new growth, and those soft inner leaves are delightful with sweet shallots, garlic, marjoram, a few scrapings of nutmeg and a knob of butter. I tend to slightly overcook them, for around four or five minutes. Serve as a side, or mix with ricotta and use as a filling for ravioli with sage butter, or on a pizza with a fine grating of Parmesan. And they're very nice if you serve them under a steak and let it rest

so all the lovely juices sink down into the nettles.
