This is Flat Rock's take on unoaked chardonnay, hence the name Unplugged. So, you know it's not going to be heavy with vanilla-caramel flavours or charred-toasty notes associated with oak-barrel aging. But, strictly speaking, a small portion of the wine was fermented in 10-year-old oak barrels (75 per cent in large steel tanks). With a decade of use, oak retains none of its telltale flavouring, but the small container size helps keep the wine in close contact with the lees, or spent yeast cells, and that contributes richer texture. It's smooth and slightly buttery, with subtly sweet tropical fruit kept in good balance with acidity. Available at select LCBO Vintages stores in Ontario and direct from the winery, flatrockcellars.com.
